Ingredients

  • 1 large head cauliflower approx. 2-3 lbs or 900g-1.3kg
  • 2 tbsp olive oil 30ml
  • 1 tsp ground cumin 2g
  • 1 tsp smoked paprika 2g
  • ½ tsp ground coriander 1g
  • ¼ tsp ground cinnamon 0.5g
  • ¼ tsp cayenne pepper 0.5g
  • ¼ tsp ground ginger 0.5g
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Remove the outer leaves from the cauliflower and trim the stem, ensuring the head remains intact.
  • Slice the cauliflower head into 1-inch (2.5cm) thick steaks. Depending on the size of your cauliflower, you should get about 4 steaks.
  • In a small bowl, mix together the olive oil, cumin, smoked paprika, coriander, cinnamon, cayenne, and ginger to create a spice rub.
  • Brush both sides of each cauliflower steak with the spice rub, making sure they are well coated.
  • Season the cauliflower steaks with salt and pepper to taste.
  • Place the spiced cauliflower steaks on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for about 25 minutes or until the cauliflower is tender and the edges are golden brown.
  • Garnish with fresh cilantro before serving, if desired.

Notes

The size of your cauliflower and the thickness of the steaks will affect the cooking time; adjust as necessary.
If you have leftover cauliflower florets, you can roast them alongside the steaks or save them for another dish.
For a complete meal, serve these cauliflower steaks on a bed of low-carb couscous substitute, such as cauliflower rice seasoned with similar Moroccan spices.
