Ingredients

Meatloaf

  • 2 pounds ground beef (80/20)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup almond flour
  • 1 large egg
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika

Spicy Glaze

  • ½ cup sugar-free ketchup
  • 1 tbsp hot sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp granulated erythritol
  • ½ tsp garlic powder
  • ¼ tsp ground cumin

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the ground beef, onion, garlic, almond flour, egg, Worcestershire sauce, salt, pepper, and smoked paprika until well combined.
  • Transfer the mixture to a loaf pan and shape it into a loaf.
  • In a small bowl, whisk together the ingredients for the spicy glaze: sugar-free ketchup, hot sauce, apple cider vinegar, erythritol, garlic powder, and cumin.
  • Spread half of the glaze evenly over the top of the meatloaf.
  • Place the meatloaf in the oven and bake for 45 minutes.
  • After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze on top.
  • Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For best results, let the meatloaf mixture rest for a few minutes after mixing to allow the flavors to meld.
The spicy glaze can be adjusted to your heat preference by increasing or decreasing the amount of hot sauce.
Leftover meatloaf makes excellent sandwiches or can be crumbled over salads for a protein-packed meal option.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
