Ingredients

  • 2 pounds Turnips, peeled and cubed
  • 4 tablespoons Butter, unsalted
  • ¼ cup Fresh chives, finely chopped
  • ¼ cup Heavy cream
  • 1 teaspoon Garlic powder
  • Salt to taste
  • Ground black pepper to taste

Instructions

  • Bring a large pot of salted water to a boil. Add the cubed turnips and cook until they are tender, which should take about 20-25 minutes.
  • While the turnips are boiling, prepare the chive butter. In a small pan, melt 2 tablespoons of butter over low heat. Add the chopped chives and gently sauté for 1-2 minutes until fragrant. Remove from heat and set aside.
  • Once the turnips are tender, drain them well and transfer them back to the pot. Add the remaining 2 tablespoons of butter, heavy cream, garlic powder, salt, and pepper.
  • Using a potato masher or an electric hand mixer, mash the turnips to your desired consistency. For a smoother texture, continue to mash or mix until creamy.
  • Fold in the chive butter mixture until well combined and the mashed turnips are evenly flavored.
  • Taste and adjust the seasoning if necessary. Serve warm as a delightful low-carb alternative to traditional mashed potatoes.

Notes

For an even richer flavor, you can roast the turnips before mashing, which will caramelize their natural sugars and intensify their taste. Additionally, if you're looking to experiment, consider adding a pinch of nutmeg or a splash of truffle oil for an elevated twist.
