Equipment

  • Medium mixing bowl
  • Whisk
  • Non-Stick Skillet or Griddle
  • Spatula

Ingredients

  • 1 cup almond flour (96g / 3.4oz)
  • ½ cup ricotta cheese (124g / 4.4oz)
  • 2 large eggs
  • 1 tablespoon granulated erythritol (14g / 0.5oz)
  • Zest of 1 lemon
  • 1 tablespoon lemon juice (15ml / 0.5fl oz)
  • ½ teaspoon baking powder (2g / 0.07oz)
  • ¼ teaspoon salt (1g / 0.04oz)
  • Butter or oil for the pan as needed

Instructions

  • In a medium mixing bowl, combine the almond flour, baking powder, and salt, whisking to remove any lumps.
  • In a separate bowl, blend together the ricotta cheese, eggs, erythritol, lemon zest, and lemon juice until smooth.
  • Fold the wet ingredients into the dry ingredients, mixing until just combined to form a batter.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface and the edges appear set.
  • Carefully flip the pancakes and cook for an additional 2-3 minutes or until golden brown and cooked through.
  • Serve immediately with your choice of keto-friendly toppings such as sugar-free syrup, whipped cream, or fresh berries.

Notes

Ensure that your skillet is at the right temperature before pouring the batter to avoid the pancakes from sticking.
If the batter is too thick, you can thin it with a tablespoon of almond milk or water.
For an extra lemony flavor, you can add more lemon zest to the batter or top your pancakes with a sprinkle of zest before serving.
Remember to count the carbs from any additional toppings to maintain a low-carb intake.
