Ingredients

  • 2 cups Almond flour (224g)
  • ¾ cup Granulated erythritol (144g)
  • 2 tsp Baking powder (9.6g)
  • ¼ tsp Salt (1.5g)
  • 2 tbsp Poppy seeds (18g)
  • 3 Eggs large
  • cup Unsalted butter, melted (76g)
  • ¼ cup Unsweetened almond milk (60ml)
  • ¼ cup Fresh lemon juice (60ml)
  • Lemon zest from 2 lemons
  • 1 tsp Vanilla extract (5ml)

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with butter or non-stick cooking spray.
  • In a medium-sized mixing bowl, whisk together the almond flour, erythritol, baking powder, and salt until well combined.
  • Stir in the poppy seeds and set aside.
  • In a separate bowl, beat the eggs until they become slightly frothy. Then mix in the melted butter, almond milk, lemon juice, lemon zest, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients and mix until just combined, being careful not to overmix.
  • Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  • Bake for 20 minutes, or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

If you're not on a strict keto diet, you can substitute the granulated erythritol with an equal amount of your preferred sweetener. You can also add a glaze by mixing powdered erythritol with a bit of lemon juice for an extra lemony kick. Make sure to store leftovers in an airtight container to maintain freshness.
