Ingredients

  • 1 ½ cups shredded mozzarella cheese 170g
  • 2 tablespoons cream cheese 30g
  • 1 cup almond flour 96g
  • 1 large egg
  • ½ teaspoon garlic powder 1.5g
  • ½ teaspoon dried oregano 0.5g
  • ¼ teaspoon salt 1.5g
  • ¼ teaspoon black pepper 0.5g
  • ¼ cup grated Parmesan cheese 28g
  • 2 tablespoons fresh parsley finely chopped, 8g
  • 1 tablespoon olive oil 15ml

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a microwave-safe bowl, combine the mozzarella and cream cheese. Microwave for 45-60 seconds until the cheeses are melted and can be stirred together to form a smooth mixture.
  • Add the almond flour, egg, garlic powder, oregano, salt, and pepper to the melted cheese mixture. Mix well until a dough forms.
  • Place the dough between two pieces of parchment paper and roll out to about 1/2 inch thickness. Remove the top parchment and transfer the dough (on the bottom parchment) to the prepared baking sheet.
  • Brush the surface of the dough with olive oil and sprinkle with the grated Parmesan cheese and half of the chopped parsley.
  • Bake for 15-20 minutes, or until the edges are golden brown and the cheese topping is bubbly.
  • Remove from the oven and let cool slightly. Cut into breadstick shapes, garnish with the remaining parsley, and serve warm.

Notes

Ensure your cream cheese and egg are at room temperature for easier mixing.
If the dough becomes too stringy and hard to mix, pop it back in the microwave for a few seconds to soften.
For an extra kick of flavor, add a pinch of red pepper flakes to the topping.
These breadsticks are best served warm, but can be reheated in the oven or microwave if necessary.
