Ingredients

  • ½ head green cabbage approximately 1 lb or 450g
  • 1 large cucumber approximately 8 oz or 225g
  • 1 cup fresh parsley leaves approximately 2 oz or 60g
  • ½ lemon, peeled approximately 2 oz or 60g
  • 1 inch fresh ginger root approximately 0.5 oz or 15g
  • ½ cup cold water 4 fl oz or 120ml

Instructions

  • Begin by thoroughly washing the cabbage, cucumber, parsley, lemon, and ginger root to remove any dirt or residue.
  • Roughly chop the cabbage and cucumber into chunks small enough to fit through the feed chute of your juicer.
  • Peel the lemon and ginger root, then chop the ginger into smaller pieces.
  • Start the juicer and begin feeding the cabbage, cucumber, parsley, lemon, and ginger through the machine, alternating between the ingredients to ensure an even blend.
  • Once all the produce has been juiced, check the consistency. If the juice is too thick, add the cold water and stir to combine.
  • Pour the juice through a fine-mesh strainer or cheesecloth into a large pitcher or bowl to remove any excess pulp, if desired.
  • Serve the juice immediately over ice, or store it in an airtight container in the refrigerator for up to 24 hours.

Notes

For a sweeter juice, you can add a keto-friendly sweetener like stevia or erythritol to taste.
