  • 1 medium lemon peeled and seeds removed
  • 1 tablespoon chia seeds 10g
  • ½ cup unsweetened almond milk 118ml
  • ½ cup ice cubes or more, as needed
  • Stevia or erythritol to taste, for added sweetness

Instructions

  • Begin by thoroughly washing the blueberries and spinach leaves to remove any dirt or debris.
  • Peel the lemon, carefully removing the seeds to avoid bitterness in your juice.
  • In a blender, combine the blueberries, spinach, and lemon. Blend on high until the mixture starts to become smooth.
  • Add the chia seeds to the blender. These will not only add texture and fiber but also help to thicken the juice slightly.
  • Pour in the unsweetened almond milk and add the ice cubes. Blend again on high until you achieve a smooth consistency. If the juice is too thick for your liking, you can add a little more almond milk or water to reach your desired thickness.
  • Taste the juice and, if desired, add a natural low-carb sweetener like stevia or erythritol. Blend briefly to incorporate the sweetener throughout the juice.
