Ingredients

  • 1 medium beetroot (approx. 3 oz or 85g), peeled and quartered
  • 1 cup raspberries (approx. 4.4 oz or 125g), fresh or frozen
  • 1 tablespoon lemon juice (approx. 0.5 oz or 15ml)
  • 2 cups cold water (approx. 16 fl oz or 475ml)
  • 1 tablespoon chia seeds (optional for added fiber, approx. 0.5 oz or 15g)
  • Stevia or monk fruit sweetener to taste (optional)

Instructions

  • Start by preparing the beetroot. Peel it with a vegetable peeler, then cut it into quarters. This will help it blend more easily and extract maximum juice.
  • Place the quartered beetroot, fresh or frozen raspberries, and lemon juice into a high-powered blender.
  • Add the cold water to the blender. If you prefer a thinner consistency, you can add more water to your preference.
  • If using, add the chia seeds to the mixture. They will give an additional fiber boost and slightly thicken the juice.
  • Blend on high speed for about 1-2 minutes or until the mixture is smooth.
  • Taste the juice and add sweetener if desired. Blend again for a few seconds to mix the sweetener thoroughly.
  • Strain the juice using a fine mesh sieve or cheesecloth over a large bowl to remove the pulp and seeds. Press the solids with the back of a spoon to extract as much liquid as possible.
  • Pour the strained juice into glasses and serve immediately, or chill in the refrigerator for later.

Notes

For those following a strict ketogenic diet, be mindful of the natural sugars present in beets and raspberries. Adjust the portion size accordingly to maintain ketosis. The addition of chia seeds not only increases the fiber content but also helps in maintaining satiety. This juice is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 24 hours.
