Ingredients

  • 1 medium head cauliflower (about 2 lbs / 900 g), riced
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 4 large eggs
  • ¼ cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp baking powder

Instructions

  • Start by preheating your waffle maker according to the manufacturer's instructions. Meanwhile, remove the leaves from the cauliflower and cut it into florets. Rinse them under cold water and then steam or microwave until tender, about 5-7 minutes. Allow to cool slightly.
  • Once the cauliflower is cool enough to handle, transfer it to a clean kitchen towel. Squeeze out as much moisture as possible, which will help achieve crispy waffles. After squeezing, pulse the cauliflower florets in a food processor until they resemble rice or fine crumbs.
  • In a large mixing bowl, combine the riced cauliflower, shredded cheddar cheese, grated Parmesan cheese, eggs, heavy cream, garlic powder, onion powder, salt, black pepper, and baking powder. Mix everything together until well combined. The mixture should be thick and hold together.
  • Lightly grease the waffle maker with cooking spray or a little olive oil. Spoon about 1/2 cup of the cauliflower mixture onto the preheated waffle maker, spreading it out slightly. Close the lid and cook for about 5-7 minutes or until the waffles are golden brown and crispy. Repeat this process with the remaining batter.
  • Carefully remove the waffles from the waffle maker and serve immediately. Top your loaded waffles with sour cream, chopped chives, crispy bacon bits, or avocado slices for an extra layer of flavor.

Notes

For a spicier kick, consider adding diced jalapeños to the batter. These waffles can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the waffle maker or oven for best results. Feel free to experiment with different cheese varieties, such as mozzarella or pepper jack, to customize your waffles.
