Ingredients

  • 1 large head Cauliflower (about 2 lbs / 900 g), cut into florets
  • 2 tablespoons Olive oil (30 ml)
  • 1 lb Ground beef (450 g), preferably 80/20 for extra flavor
  • 2 tablespoons Taco seasoning (30 g)
  • 2 cups Cheddar cheese (8 oz / 225 g), shredded
  • 4 oz Cream cheese (115 g), softened
  • ½ cup Sour cream (120 ml)
  • ¼ cup Jalapeños (30 g), sliced (fresh or pickled)
  • ¼ cup Green onions (15 g), chopped
  • 1 medium Avocado , diced
  • ¼ cup Cilantro (15 g), chopped (optional)
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Toss the cauliflower florets with olive oil, salt, and pepper until well coated. Spread in a single layer on a baking sheet lined with parchment paper. Roast for about 20 minutes, flipping halfway through.
  • While the cauliflower is roasting, heat a skillet over medium heat. Add the ground beef and cook until browned. Drain excess fat if necessary. Stir in the taco seasoning and a splash of water, cooking for an additional 2-3 minutes.
  • In a small bowl, mix the softened cream cheese with half of the shredded cheddar cheese until combined.
  • Once the cauliflower is roasted, reduce the oven temperature to 375°F (190°C). In an oven-safe skillet or a large baking dish, layer the roasted cauliflower, spread the cream cheese mixture, followed by the cooked ground beef, and top with remaining cheddar cheese.
  • Bake for 10-15 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let cool slightly. Top with sour cream, diced avocado, jalapeños, green onions, and cilantro if desired.
  • Serve warm, and dig in with a fork or your favorite keto-friendly chips!
