Ingredients

  • 1 lb boneless, skinless chicken thighs (450 g)
  • 2 tbsp olive oil (30 ml)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 lemon zest of 1 lemon
  • 2 tbsp lemon juice (about 30 ml)
  • 2 tbsp fresh parsley, chopped (30 g)
  • 2 tbsp fresh basil, chopped (30 g)
  • 4 oz cream cheese, softened (113 g)
  • ¼ cup grated Parmesan cheese (60 g)

Instructions

  • Begin by preheating your oven to 375°F (190°C). Place the chicken thighs on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Bake in the preheated oven for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Once done, remove from the oven and let it cool for a few minutes.
  • Once the chicken is cool enough to handle, shred it using two forks or chop it finely with a knife. Place the shredded chicken in a mixing bowl.
  • To the bowl with the shredded chicken, add the lemon zest, lemon juice, chopped parsley, chopped basil, softened cream cheese, and grated Parmesan cheese. Drizzle in the remaining tablespoon of olive oil. Mix all the ingredients together thoroughly until well combined. The mixture should be creamy and hold together well.
  • Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the balls on a parchment-lined baking sheet. Repeat until all the mixture is formed into fat bombs.
  • Once shaped, place the baking sheet in the refrigerator for at least 30 minutes to allow the fat bombs to firm up. This helps them hold their shape when serving.
  • After chilling, your Lemon Herb Chicken Fat Bombs are ready to enjoy! Serve them cold or at room temperature as a perfect snack or appetizer.

Notes
