Ingredients

  • ½ cup coconut oil melted (or 100g)
  • ½ cup unsweetened almond butter (or 150g)
  • ¼ cup fresh lemon juice
  • 1 lemon zest of 1 lemon
  • ¼ cup powdered erythritol (or sweetener of choice)
  • ½ cup unsweetened shredded coconut
  • ¼ tsp salt
  • ½ tsp vanilla extract

Instructions

  • Start by preparing your silicone mold or mini muffin tin. If using a muffin tin, line it with paper liners for easy removal.
  • In a medium microwave-safe bowl, melt the coconut oil. Heat it in 20-30 second intervals until completely melted, then let it cool slightly.
  • Add the almond butter to the melted coconut oil and stir until well combined. Then, pour in the fresh lemon juice, lemon zest, powdered erythritol, shredded coconut, salt, and vanilla extract. Mix everything together until smooth and creamy.
  • Carefully pour the mixture into your prepared molds, filling each cavity about three-quarters full. Use a spatula to smooth the tops if necessary.
  • Place the molds in the freezer for at least 30 minutes, or until the fat bombs are firm and set.
  • Once set, gently pop the fat bombs out of the molds. Store in an airtight container in the refrigerator for up to two weeks or in the freezer for longer storage.
