Ingredients

  • 3 to 4 pounds Pork loin roast, boneless
  • 2 tablespoons Olive oil
  • ¼ cup Fresh lemon juice
  • Lemon zest from 1 lemon
  • 2 tablespoons Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 3 cloves Fresh garlic, minced
  • 2 teaspoons Sea salt
  • 1 teaspoon Ground black pepper

Instructions

  • Preheat your oven to 375°F (190°C). Position the oven rack in the middle.
  • In a small bowl, combine the olive oil, lemon juice, lemon zest, chopped rosemary, thyme, minced garlic, sea salt, and black pepper to create a marinade.
  • Pat the pork loin dry with paper towels and place it in a roasting pan.
  • Rub the marinade evenly over the pork loin, ensuring it's well coated.
  • Allow the pork to marinate for at least 15 minutes at room temperature to absorb the flavors.
  • Roast the pork loin in the preheated oven for about 60 minutes, or until the internal temperature reaches 145°F (63°C) when checked with a meat thermometer.
  • Once cooked, remove the pork loin from the oven and let it rest for 10 minutes, tented with aluminum foil to retain heat. This allows the juices to redistribute throughout the meat.
  • After resting, slice the pork loin into thin slices and serve.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
