Equipment

  • Mixing bowl
  • Hand mixer or whisk
  • Measuring cups and spoons
  • Serving cups or silicone molds
  • Spatula

Ingredients

  • 8 oz cream cheese softened
  • 4 oz smoked salmon finely chopped
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh dill chopped (plus extra for garnish)
  • 1 tbsp sour cream
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt and pepper to taste
  • ¼ cup almond flour (for crust alternative, optional)
  • 1 tbsp unsalted butter (for crust alternative, optional)

Instructions

  • In a medium mixing bowl, combine the softened cream cheese, smoked salmon, lemon juice, lemon zest, chopped dill, sour cream, garlic powder, and onion powder. Use a hand mixer or a whisk to blend the ingredients until smooth and creamy. Taste the mixture and season with salt and pepper as desired.
  • If you prefer a base for your cheesecake bites, mix the almond flour with melted butter in a small bowl until it resembles a crumbly texture. Press about a teaspoon of this mixture into the bottom of each serving cup or small silicone mold to form a crust. This step is optional as the bites can be served without a crust.
  • Spoon the salmon cheesecake mixture into each prepared serving cup or mold, filling them to the top. Smooth the tops with a spatula or the back of a spoon for a neat finish.
  • Place the assembled bites in the refrigerator for at least 30 minutes to an hour, allowing them to firm up and the flavors to meld together.
  • Once chilled, remove the bites from the refrigerator. Garnish each one with a sprig of fresh dill and an additional sprinkle of lemon zest for a pop of color. Serve cold as a luxurious appetizer or snack.

Notes

Feel free to substitute the smoked salmon with canned salmon for a more budget-friendly option. These bites can be made a day in advance, making them a perfect choice for meal prep or entertaining. Store leftovers in an airtight container in the refrigerator for up to 3 days.
