Ingredients

  • 2 ripe avocados, peeled and pitted (approx. 200g each)
  • ¼ cup fresh lime juice (60ml)
  • 1 Zest of lime
  • ½ cup coconut cream (120ml)
  • ¼ cup powdered erythritol (48g)
  • 1 tsp vanilla extract (5ml)
  • Pinch of sea salt
  • 1 tbsp unsweetened shredded coconut for garnish (optional)

Instructions

  • In a blender or food processor, combine the peeled and pitted avocados, fresh lime juice, lime zest, coconut cream, powdered erythritol, vanilla extract, and a pinch of sea salt.
  • Blend on high until the mixture is smooth and there are no avocado chunks left.
  • Taste the mousse and adjust sweetness or tartness if necessary. If you prefer a thinner consistency, add a little more coconut cream.
  • Divide the mousse evenly among four serving dishes.
  • Chill in the refrigerator for at least 1 hour to set and develop the flavors.
  • Before serving, garnish with a sprinkle of shredded coconut and additional lime zest if desired.

The erythritol can be substituted with any keto-friendly sweetener of your choice; adjust to taste.
