2ripe avocados, peeled and pitted(approx. 200g each)
¼cupfresh lime juice(60ml)
1Zest of lime
½cupcoconut cream(120ml)
¼cuppowdered erythritol(48g)
1tspvanilla extract(5ml)
Pinch of sea salt
1tbspunsweetened shredded coconut for garnish(optional)
Instructions
In a blender or food processor, combine the peeled and pitted avocados, fresh lime juice, lime zest, coconut cream, powdered erythritol, vanilla extract, and a pinch of sea salt.
Blend on high until the mixture is smooth and there are no avocado chunks left.
Taste the mousse and adjust sweetness or tartness if necessary. If you prefer a thinner consistency, add a little more coconut cream.
Divide the mousse evenly among four serving dishes.
Chill in the refrigerator for at least 1 hour to set and develop the flavors.
