Ingredients

  • 4 chicken thighs, bone-in and skin-on (approx. 1.5 lbs / 680 g)
  • 2 tbsp olive oil (30 ml)
  • 3 cloves garlic, minced (9 g)
  • 1 lemon, juice and zest (50 ml juice)
  • 1 tsp dried oregano (1 g)
  • 1 tsp dried thyme (1 g)
  • ½ tsp red pepper flakes (1 g)
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine olive oil, minced garlic, lemon juice and zest, oregano, thyme, red pepper flakes, salt, and pepper.
  • Place the chicken thighs in a baking dish. Pour the lemon garlic mixture over the chicken, ensuring each piece is well coated.
  • Let the chicken marinate for 10 minutes to absorb the flavors.
  • Bake in the preheated oven for 45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.
  • Remove from oven and let rest for 5 minutes before serving.

Notes

For the best flavor, you can marinate the chicken thighs for up to 24 hours in the refrigerator. Let them come to room temperature before baking. Pair with a side of steamed vegetables or a crisp salad for a complete keto meal.
