Ingredients

  • 1 pound chicken livers, cleaned and trimmed
  • 2 shallots, finely chopped about 1/4 cup or 40g
  • 2 cloves garlic, minced
  • ½ cup dry white wine suitable for keto diet
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons heavy cream
  • 1 teaspoon white truffle oil
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Instructions

  • In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shallots and garlic, and sauté until translucent, about 2-3 minutes.
  • Increase the heat to medium-high and add the chicken livers to the skillet. Cook the livers for about 2 minutes on each side until browned but still slightly pink in the middle.
  • Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Allow the mixture to simmer for about 3 minutes, or until the liquid is reduced by half.
  • Remove from the heat and let it cool slightly. Transfer the liver mixture to a food processor.
  • Add the remaining 2 tablespoons of butter, heavy cream, white truffle oil, and a generous pinch of salt and pepper to the food processor.
  • Blend until the mixture is smooth and creamy, stopping to scrape down the sides as necessary.
  • Taste and adjust the seasoning if needed, then transfer the pâté to a serving dish or jar. Cover and refrigerate for at least 2 hours, or until the pâté is firm.
  • Garnish with fresh thyme leaves before serving. Serve with keto-friendly crackers or vegetable sticks.

Notes

For a smoother pâté, pass the mixture through a fine-mesh sieve before refrigerating.
If you do not consume alcohol, you can substitute the white wine with chicken broth.
Ensure that the chicken livers are fresh for the best flavor and texture.
The pâté can be stored in the refrigerator for up to one week.
