Ingredients

Gelatin Cups

  • 2 cups unsweetened apple cider 480ml
  • 1 cinnamon stick
  • 4 whole cloves
  • 2 envelopes unflavored gelatin about 14g
  • ¼ cup cold water 60ml
  • ¼ cup granulated erythritol 48g

Keto Whipped Cream

  • 1 cup heavy whipping cream 240ml
  • 1 tablespoon powdered erythritol 9g
  • ½ teaspoon vanilla extract 2.5ml

Instructions

  • Begin by preparing the gelatin cups. In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for about 5 minutes to bloom.
  • In a saucepan, combine the unsweetened apple cider with the cinnamon stick and cloves. Bring the mixture to a simmer over medium heat, stirring occasionally.
  • Once simmering, remove the saucepan from the heat and discard the cinnamon stick and cloves.
  • Add the bloomed gelatin and granulated erythritol to the warm apple cider. Stir until both the gelatin and erythritol have completely dissolved.
  • Pour the gelatin mixture into six individual cups or molds. Place them in the refrigerator to set for about 3 hours, or until firm.
  • For the keto whipped cream, pour the heavy whipping cream into a chilled bowl. Using an electric mixer, beat the cream until soft peaks form.
  • Add the powdered erythritol and vanilla extract to the whipped cream and continue beating until stiff peaks form.
  • Once the gelatin cups have set, top each with a generous dollop of the keto whipped cream before serving.

Notes

Ensure the apple cider used is unsweetened to keep this dessert keto-friendly.
The erythritol can be adjusted according to desired sweetness, and other keto-friendly sweeteners can be used if preferred.
The gelatin cups can be prepared in advance and stored in the refrigerator for up to 3 days.
For an extra festive touch, sprinkle a little cinnamon or nutmeg on top of the whipped cream before serving.
