Keto Whipped Cream
1cupheavy whipping cream240ml

Instructions
Begin by preparing the gelatin cups. In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for about 5 minutes to bloom.
In a saucepan, combine the unsweetened apple cider with the cinnamon stick and cloves. Bring the mixture to a simmer over medium heat, stirring occasionally.
Once simmering, remove the saucepan from the heat and discard the cinnamon stick and cloves.
Add the bloomed gelatin and granulated erythritol to the warm apple cider. Stir until both the gelatin and erythritol have completely dissolved.
Pour the gelatin mixture into six individual cups or molds. Place them in the refrigerator to set for about 3 hours, or until firm.
For the keto whipped cream, pour the heavy whipping cream into a chilled bowl. Using an electric mixer, beat the cream until soft peaks form.
Add the powdered erythritol and vanilla extract to the whipped cream and continue beating until stiff peaks form.
Once the gelatin cups have set, top each with a generous dollop of the keto whipped cream before serving.
