Ingredients

  • 2 cups Watermelon, diced
  • ½ cup Feta cheese, crumbled

  • ¼ cup Red onion, thinly sliced
  • 2 cups Fresh arugula or mixed greens
  • ¼ teaspoon Sea salt

  • 2 tablespoons Optional: pumpkin seeds, toasted

Instructions

  • Start by dicing the watermelon into bite-sized pieces. Be sure to remove any seeds if not using a seedless variety.
  • In a small bowl, whisk together the extra virgin olive oil and fresh lime juice to create a simple vinaigrette.
  • Thinly slice the red onion and chop the fresh mint leaves, setting them aside for the salad assembly.
  • In a large mixing bowl, combine the diced watermelon, crumbled feta cheese, and sliced red onion.
  • Drizzle the olive oil and lime vinaigrette over the watermelon mixture.
  • Season the salad with sea salt and freshly ground black pepper to taste, and toss gently to combine all the ingredients without breaking up the watermelon.
  • Add the fresh mint leaves and arugula or mixed greens to the salad. If using, sprinkle toasted pumpkin seeds on top for added crunch and flavor.
  • Give the salad a final gentle toss, ensuring that the mint and greens are evenly distributed throughout.
  • Serve immediately, or chill in the refrigerator for 15 minutes before serving if a colder salad is preferred.

Notes

To keep this salad keto-friendly, be mindful of the watermelon portions, as it contains natural sugars.
For a dairy-free version, omit the feta or use a dairy-free cheese alternative.
The pumpkin seeds are optional but add a nice textural contrast and a boost of magnesium.
This salad is best enjoyed fresh, as the watermelon will release juices if stored for too long.
