Ingredients

  • 2 cups Chicken breast, cooked and diced
  • 1 cup Celery, diced
  • ½ cup Red seedless grapes, halved (and quartered if large)
  • ½ cup Walnuts, chopped
  • ½ cup Mayonnaise
  • ¼ cup Sour cream
  • 1 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 2 tbsp Fresh parsley, chopped
  • ½ tsp Salt, to taste
  • ¼ tsp Black pepper, freshly ground

Instructions

  • Begin by preparing your cooked chicken breast. If you haven't done so already, cook the chicken through boiling or grilling, then let it cool before dicing into bite-sized pieces.
  • In a large mixing bowl, combine the diced chicken, diced celery, halved grapes, and chopped walnuts. Toss these ingredients together gently to evenly distribute.
  • In a separate smaller bowl, whisk together the mayonnaise, sour cream, lemon juice, and Dijon mustard until the mixture is smooth and well-combined.
  • Pour the creamy dressing over the chicken mixture in the large bowl. Add the chopped parsley, and season with salt and pepper to taste.
  • Fold all the ingredients together until the chicken and other components are fully coated with the dressing.
  • Taste and adjust the seasoning if necessary. If you prefer a tangier flavor, add a little more lemon juice.
  • Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Notes

For a crunchier texture, add the walnuts just before serving.
To keep this dish strictly keto, ensure that your grapes are measured correctly, as they contain natural sugars.
The salad can be stored in an airtight container in the refrigerator for up to 3 days.
You can substitute the sour cream with Greek yogurt for a tangier version of the dressing.
If you're in a rush, using canned chicken breast (drained) is a quick and easy alternative to cooking fresh chicken.
