Ingredients

For the Venison

  • 1 pound venison steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and pepper to taste

For the Cranberry Salsa

  • 1 cup fresh cranberries, finely chopped
  • ¼ cup red onion, finely diced
  • 1 jalapeno, seeds removed and finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 Juice of 1 lime
  • Salt to taste

For Serving

  • 8 large lettuce leaves (to use as taco shells)
  • 1 avocado, sliced
  • ½ cup shredded cheddar cheese

Instructions

  • Begin by preparing the venison. In a mixing bowl, combine the olive oil, chili powder, ground cumin, garlic powder, onion powder, salt, and pepper. Add the sliced venison to the bowl and toss until the meat is well-coated with the seasoning mixture.
  • Heat a large skillet over medium-high heat. Once hot, add the seasoned venison slices to the skillet. Cook for about 2-3 minutes on each side or until the meat is browned and cooked to your desired level of doneness. Remove from heat and set aside.
  • To make the cranberry salsa, combine the chopped cranberries, red onion, jalapeno, cilantro, and lime juice in a bowl. Stir well and season with salt to taste. Set aside to let the flavors meld.
  • Assemble the tacos by placing a few slices of the cooked venison onto each lettuce leaf. Top with a generous spoonful of cranberry salsa, a couple of avocado slices, and a sprinkle of shredded cheddar cheese.
  • Serve immediately while the venison is still warm.

Notes

Adjust the level of heat in the salsa by adding more or less jalapeno. For added richness, consider topping your tacos with a dollop of sour cream or a keto-friendly yogurt. If you prefer a little more crunch, you can also serve these with keto-friendly taco shells made from cheese or low-carb tortillas.
