Equipment

  • Large pot
  • Immersion blender or stand blender
  • Measuring cups and spoons
  • Cutting board and knife

Ingredients

  • 1 lb asparagus woody ends trimmed and chopped
  • 1 medium onion diced (about 150g)
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 3 cups vegetable broth low sodium if possible
  • 1 cup canned coconut cream
  • 1 tsp salt or to taste
  • ½ tsp black pepper
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice
  • Fresh herbs for garnish optional

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the chopped asparagus to the pot and sauté for 5 minutes, allowing the asparagus to become slightly tender and bright green.
  • Pour in the vegetable broth and bring the mixture to a simmer. Cook for 10 minutes, or until the asparagus is completely tender.
  • Remove the pot from the heat and blend the soup using an immersion blender until smooth. Alternatively, you can transfer the soup to a stand blender and blend in batches, then return to the pot.
  • Stir in the coconut cream, salt, pepper, nutmeg, and lemon juice. Adjust the seasonings to your taste.
  • Return the pot to low heat and warm the soup through, ensuring it does not boil.
  • Serve the soup hot, garnished with fresh herbs if desired.

Notes

To ensure this soup stays keto-friendly, be mindful of the coconut cream brand as some may contain added sugars.
If you prefer a thinner soup, you can adjust the consistency by adding a bit more vegetable broth until you reach your desired thickness.
This soup can be stored in an airtight container in the refrigerator for up to 3 days or frozen for longer storage.
