Ingredients

  • 1 cup Greek yogurt, full-fat 240g
  • 1 medium cucumber, seeded and finely grated about 1 cup, 150g
  • 2 cloves garlic, minced about 2 teaspoons, 6g
  • 1 tablespoon fresh dill, chopped 3g
  • 1 tablespoon olive oil 15ml
  • 1 tablespoon lemon juice 15ml
  • ¼ teaspoon Salt
  • ¼ teaspoon pepper

Instructions

  • Begin by preparing the cucumber. Cut it in half lengthwise and use a spoon to scrape out the seeds. Grate the cucumber flesh using a box grater or a food processor with a grating attachment. Place the grated cucumber in a fine mesh strainer over a bowl and sprinkle with a pinch of salt. Let it sit for a few minutes to draw out excess moisture.
  • While the cucumber is draining, take a medium mixing bowl and combine the Greek yogurt, minced garlic, chopped dill, olive oil, and lemon juice. Stir until all the ingredients are well incorporated and the mixture is smooth.
  • Returning to the cucumber, use your hands or the back of a spoon to press out any remaining liquid. You want the cucumber to be as dry as possible to ensure a thick and creamy tzatziki sauce.
  • Add the drained cucumber to the yogurt mixture and stir to combine. Season with salt and pepper to taste. For the best flavor, cover and refrigerate for at least an hour before serving, allowing the flavors to meld together.
  • Serve your Keto Tzatziki Sauce as a dip with fresh vegetables, over grilled meats, or as a sauce in keto-friendly wraps.

Notes

For a thicker sauce, use strained Greek yogurt or let your yogurt strain through a cheesecloth for a few hours to remove excess liquid.
If you're short on time, you can use pre-grated cucumber, but be sure to drain it well to avoid a watery tzatziki.
This sauce can be stored in an airtight container in the refrigerator for up to 3 days. Stir well before serving if any liquid has separated.
