Ingredients

Cloud Bread

  • 3 large eggs, separated (yolks and whites)
  • 3 ounces cream cheese, softened
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon salt

Tuna Salad

  • 1 can tuna in water, drained 5 ounces or 142g
  • 2 tablespoons mayonnaise
  • 1 tablespoon celery, finely chopped
  • 1 tablespoon red onion, finely chopped
  • ½ teaspoon Dijon mustard
  • Salt and pepper to taste
  • ½ cup cheddar cheese, shredded

Instructions

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Begin by making the cloud bread. In a large bowl, combine egg whites and cream of tartar. Using a hand mixer, beat the egg whites until stiff peaks form.
  • In another bowl, mix together the egg yolks, cream cheese, and salt until smooth.
  • Gently fold the yolk mixture into the egg whites, being careful not to deflate the whites.
  • Spoon the mixture onto the prepared baking sheet, forming 4 even rounds. Bake for approximately 25-30 minutes, or until golden brown.
  • While the cloud bread is baking, prepare the tuna salad by mixing together drained tuna, mayonnaise, celery, red onion, Dijon mustard, salt, and pepper in a bowl.
  • Once the cloud bread is done, remove from the oven and let it cool slightly.
  • Top two cloud bread slices with an even amount of tuna salad, sprinkle with shredded cheddar cheese, and cover with the remaining cloud bread slices.
  • Place the tuna melts back in the oven, or under the broiler, for a few minutes until the cheese is melted and bubbly.
  • Serve immediately while the cheese is warm and gooey.

Notes

For a crispy edge on your cloud bread, broil for an additional 1-2 minutes, watching carefully to avoid burning. You can also add a sprinkle of paprika or your favorite herbs to the tuna salad for extra flavor. Store any leftover cloud bread in an airtight container for up to 3 days.
