Ingredients

  • 14 oz extra firm tofu, pressed and cut into small cubes
  • 2 tablespoons avocado oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon chili powder adjust to taste
  • Salt and pepper, to taste
  • 4 low-carb keto-friendly taco shells
  • ½ cup shredded cheddar cheese
  • 1 avocado, sliced
  • ¼ cup sour cream
  • ¼ cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  • Start by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel or paper towels and place a heavy object on top for about 10-15 minutes.
  • Once the tofu is pressed, cut it into small cubes.
  • In a bowl, toss the tofu cubes with avocado oil, cumin, smoked paprika, garlic powder, onion powder, chili powder, and a pinch of salt and pepper. Ensure each piece is well coated with the seasoning.
  • Heat a non-stick skillet over medium heat and add the seasoned tofu. Cook for 5-7 minutes, stirring occasionally, until the tofu is crispy and golden brown on all sides.
  • While the tofu is cooking, prepare the taco shells according to package instructions, usually heating them in the oven for a few minutes.
  • Assemble the tacos by filling each shell with an even amount of crispy tofu, shredded cheddar cheese, and slices of avocado.
  • Top each taco with a dollop of sour cream and a sprinkle of fresh cilantro.
  • Serve immediately with lime wedges on the side for squeezing over the tacos.
