Ingredients

  • 1 pound chicken breast cut into 1-inch cubes
  • ¼ cup soy sauce or coconut aminos for a soy-free option
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons sugar-free sweetener erythritol or monk fruit
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon sugar-free ketchup
  • ½ teaspoon chili flakes optional for heat
  • 1 teaspoon xanthan gum for thickening the glaze

Instructions

  • In a bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar-free sweetener, minced garlic, grated ginger, sugar-free ketchup, and chili flakes if using. This will be your marinade.
  • Place chicken cubes in the marinade and ensure they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  • Preheat your grill or grill pan to medium-high heat.
  • While the grill is heating, thread the marinated chicken cubes onto skewers.
  • Grill the skewers for about 3-4 minutes on each side or until the chicken is cooked through and has nice grill marks.
  • While the chicken is grilling, pour the remaining marinade into a small saucepan. Add xanthan gum and whisk over medium heat until the sauce thickens into a glaze.
  • Once the chicken is cooked, brush the thickened teriyaki glaze over the skewers.
  • Grill for an additional 1-2 minutes to caramelize the glaze slightly. Be careful not to burn.

Notes

For best results, let the chicken marinate as long as possible. If using bamboo skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
