Ingredients

  • 1 (28-ounce) can whole peeled tomatoes 794g
  • 2 tbsp apple cider vinegar 30ml
  • 2 tbsp white vinegar 30ml
  • ¼ cup water 60ml
  • 2 tbsp Erythritol or preferred sugar substitute, 30g
  • 1 tsp garlic powder 3.1g
  • 1 tsp onion powder 2.1g
  • ½ tsp ground allspice 1.1g
  • ¼ tsp ground cloves 0.5g
  • 1 tsp sea salt 5g
  • tsp cayenne pepper optional for a bit of heat, 0.6g

Instructions

  • Add the whole peeled tomatoes to a blender or food processor and blend until smooth.
  • Pour the blended tomatoes into a medium saucepan and add the apple cider vinegar, white vinegar, and water.
  • Stir in the Erythritol, garlic powder, onion powder, ground allspice, ground cloves, sea salt, and cayenne pepper if using.
  • Bring the mixture to a simmer over medium heat, then reduce the heat to low.
  • Allow the ketchup to simmer for 30 minutes, stirring occasionally to prevent sticking and to ensure even reduction.
  • Once the ketchup has thickened to your desired consistency, remove it from the heat and allow it to cool.
  • If you prefer a smoother ketchup, blend the mixture again until it reaches your desired texture.
  • Taste and adjust the seasoning if necessary.
  • Transfer the ketchup to a clean jar or bottle and refrigerate. The flavor will continue to develop as it cools.

Notes

The ketchup will keep in the refrigerator for up to 2 weeks.
Ensure the ketchup is completely cool before transferring it to the jar or bottle to prevent bacterial growth.
The Erythritol can be substituted with another keto-friendly sweetener, but this may alter the nutritional content.
For a smoother texture, you can strain the ketchup through a fine-mesh sieve before bottling.
