Ingredients

  • 4 large bell peppers (any color) 680g
  • 1 lb ground beef or turkey 450g
  • 1 cup cauliflower rice 150g
  • 1 small onion, diced 100g
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 oz goat cheese, crumbled 113g
  • ½ cup marinara sauce (sugar-free) 120ml
  • 2 tbsp olive oil 30ml
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.
  • In a large skillet, heat the remaining olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  • Stir in the ground beef or turkey. Cook until browned, breaking it up with a spoon, approximately 5-7 minutes.
  • Mix in the cauliflower rice, dried oregano, paprika, salt, and pepper. Cook for an additional 2-3 minutes until the cauliflower is tender.
  • Remove the skillet from heat and fold in the crumbled goat cheese and half of the marinara sauce. Make sure everything is well combined.
  • Generously spoon the meat and goat cheese mixture into each bell pepper, packing it slightly to ensure they are filled.
  • Drizzle the remaining marinara sauce over the stuffed peppers.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the filling is heated through.
  • Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.

Notes

Feel free to customize the filling by adding your favorite vegetables or spices. You can also swap the goat cheese for cream cheese or mozzarella if desired. Enjoy this dish as a satisfying meal that fits perfectly into your keto lifestyle!
