Ingredients

  • 6 large eggs 300g
  • 4 oz smoked salmon 113g, sliced into bite-sized pieces
  • ½ cup heavy cream 120ml
  • ¼ cup red onion 40g, finely chopped
  • ¼ cup fresh dill 15g, chopped
  • ½ cup shredded mozzarella cheese 56g
  • 1 tbsp olive oil 15ml
  • Salt and pepper to taste
  • ½ tsp garlic powder 1.5g

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the eggs, heavy cream, garlic powder, salt, and pepper until well combined.
  • Stir in the shredded mozzarella cheese and fresh dill.
  • Heat olive oil in a 10-inch oven-safe skillet over medium heat.
  • Sauté the chopped red onion until translucent, about 2-3 minutes.
  • Spread the smoked salmon pieces evenly over the onions.
  • Pour the egg mixture into the skillet, making sure it covers the salmon and onions.
  • Cook for about 2-3 minutes, or until the edges start to set.
  • Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the frittata is set and slightly golden on top.
  • Remove from the oven and let it cool for a couple of minutes.
  • Slice into wedges and serve warm.

Notes

For a dairy-free version, omit the cheese and substitute coconut cream for the heavy cream. Adjust the seasoning as needed to compensate for the cheese's saltiness.
