Ingredients

Keto Sloppy Joes

  • 1 lb ground beef 453.6 g
  • ½ medium onion, finely chopped approx. 1/2 cup or 64 g
  • 1 green bell pepper, diced green bell pepper approx. 1 cup or 149 g
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste 15 g
  • 1 cup sugar-free tomato sauce 240 ml
  • 2 tbsp Worcestershire sauce 30 ml
  • 1 tbsp apple cider vinegar 15 ml
  • 1 tsp paprika 2 g
  • ½ tsp mustard powder 1 g
  • Salt and pepper to taste
  • 1 tbsp olive oil 15 ml

Keto Buns

  • 1 ½ cups almond flour 150 g
  • 5 tbsp psyllium husk powder 40 g
  • 2 tsp baking powder 10 g
  • ½ tsp sea salt 2 g
  • 2 tsp apple cider vinegar 10 ml
  • 3 egg whites
  • 1 cup boiling water 240 ml
  • Sesame seeds for topping optional

Instructions

  • Begin by preheating your oven to 350°F (175°C) for the Keto buns.
  • In a large bowl, mix together the almond flour, psyllium husk powder, baking powder, and sea salt.
  • Add the apple cider vinegar and egg whites to the dry ingredients and mix well.
  • Gradually pour in the boiling water, stirring continuously until the dough becomes thick.
  • With wet hands, form the dough into 4 bun shapes and place them on a baking sheet lined with parchment paper. Sprinkle with sesame seeds if using.
  • Bake for 25-30 minutes or until the buns are firm and have a golden crust. Remove from oven and let cool.
  • While the buns are baking, heat olive oil in a large skillet over medium heat.
  • Add the chopped onions and green peppers to the skillet, sautéing until softened, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Increase the heat to medium-high and add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned.
  • Stir in the tomato paste, sugar-free tomato sauce, Worcestershire sauce, apple cider vinegar, paprika, and mustard powder. Season with salt and pepper.
  • Reduce heat to low and simmer the mixture for 10-15 minutes until it thickens.
  • Slice the Keto buns in half and toast them if desired.
  • Spoon the Sloppy Joe mixture onto the bottom half of each bun, then cap with the top half.

Notes

For an even more ketogenic-friendly meal, serve the Sloppy Joe mixture over a bed of mixed greens instead of using buns.
