Ingredients

For the Cauliflower Mash:

  • 1 large head cauliflower approximately 2 pounds / 900g, cut into florets
  • 3 tablespoons unsalted butter 42g
  • ¼ cup heavy cream 60ml
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

For the Meat Filling:

  • 2 tablespoons olive oil 30ml
  • 1 pound ground beef 450g
  • 1 medium onion about 150g, diced
  • 2 cloves garlic minced
  • 1 cup diced bell peppers 150g
  • ½ cup frozen peas 70g
  • ½ cup frozen carrots 70g
  • 2 tablespoons tomato paste 30g
  • 1 cup beef broth 240ml
  • 1 teaspoon Worcestershire sauce optional, check for carbs
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Begin with the cauliflower mash. Steam the cauliflower florets until tender, about 7-10 minutes.
  • In a food processor or using a masher, combine the steamed cauliflower, butter, heavy cream, garlic powder, salt, and pepper. Blend or mash until it reaches a smooth, creamy consistency. Set aside.
  • For the meat filling, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  • Add the diced onion and minced garlic to the skillet with the beef, cooking until the onions become translucent.
  • Stir in the diced bell peppers, frozen peas, and carrots, and cook for an additional 5 minutes.
  • Mix in the tomato paste, beef broth, Worcestershire sauce, thyme, and rosemary. Bring the mixture to a simmer and let it cook until the liquid is reduced by half, about 10 minutes. Season with salt and pepper to taste.
  • Transfer the meat filling to a greased 9x13 inch baking dish, spreading it out evenly.
  • Spoon the cauliflower mash over the top of the meat filling and spread it out into an even layer. Use a fork to create ridges on the surface.
  • Bake in the preheated oven for 20 minutes, or until the cauliflower mash is golden brown on top.
  • Remove from the oven and let it rest for a few minutes before serving.

Notes

To ensure this dish is strictly keto, be cautious with the Worcestershire sauce as some brands may contain sugar. Always opt for frozen peas and carrots in moderation due to their higher carb content, or substitute with other keto-friendly vegetables like spinach or zucchini if preferred.
