Ingredients

  • 1 pound Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 1 medium onion, diced about 150 g
  • 3 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups kale, stems removed and leaves chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional, for added heat)

Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.
  • In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and continue to sauté until the mushrooms are soft and golden, about 5 minutes.
  • Return the cooked sausage to the pot. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to a simmer.
  • Stir in the heavy cream and chopped kale. Season with salt, pepper, and red pepper flakes if desired. Simmer for 15-20 minutes, or until the kale is tender and the flavors have melded together.
  • Taste and adjust seasoning as necessary. Serve hot.

Notes

For a dairy-free version, substitute the heavy cream with full-fat coconut milk.
Leftovers can be stored in an airtight container and refrigerated for up to 3 days or frozen for up to 3 months.
If you prefer a thinner soup, you can add more chicken broth to achieve your desired consistency.
The spiciness of this soup can be customized by choosing mild or hot Italian sausage and adjusting the amount of red pepper flakes used.
