Ingredients

For the Salmon

  • 4 medium salmon fillets about 6 ounces or 170 grams each
  • 1 tbsp olive oil 15 ml
  • 1 tsp chili powder 2 grams
  • 1 tsp cumin 2 grams
  • ½ tsp garlic powder 1 gram

For the Cilantro-Lime Slaw

  • 2 cups shredded cabbage 150 grams
  • ¼ cup chopped cilantro 15 grams
  • 2 tbsp mayonnaise 30 grams
  • 1 lime juice of, about 2 tablespoons or 30 ml
  • 1 tbsp apple cider vinegar 15 ml

For the Keto Tacos

  • 8 large lettuce leaves such as romaine or iceberg or keto-friendly tortillas

Instructions

  • Preheat your grill or skillet over medium-high heat.
  • In a small bowl, mix together the chili powder, cumin, garlic powder, salt, and pepper.
  • Brush each salmon fillet with olive oil and season with the spice mixture.
  • Place the salmon on the grill or skillet and cook for 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.
  • While the salmon is cooking, prepare the cilantro-lime slaw. In a large bowl, combine the shredded cabbage and chopped cilantro.
  • In a separate small bowl, whisk together the mayonnaise, lime juice, apple cider vinegar, salt, and pepper.
  • Pour the dressing over the cabbage and cilantro and toss until well coated. Set aside.
  • Once the salmon is done, remove it from the heat and let it rest for a couple of minutes. Then, using a fork, flake the salmon into bite-sized pieces.
  • Assemble the tacos by placing a portion of the flaked salmon onto each lettuce leaf or keto-friendly tortilla.
  • Top with a generous amount of cilantro-lime slaw.

Notes

For an extra kick, add a pinch of cayenne pepper to the spice mix for the salmon.
If you prefer a creamier slaw, add an extra tablespoon of mayonnaise.
To keep it strictly keto, opt for lettuce leaves over traditional tortillas. If you're using keto-friendly tortillas, be sure to check the label for net carbs.
Store any leftovers in an airtight container in the refrigerator for up to two days. Reheat the salmon gently to avoid drying it out.
