Ingredients

Salmon Burgers

  • 1 pound fresh salmon fillet skin removed
  • 1 large egg
  • ¼ cup almond flour
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying

Lemon Dill Sauce

  • ½ cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Instructions

  • Begin by chopping the salmon fillet into small chunks. Then, using a food processor, pulse the salmon chunks until coarsely ground. Be careful not to over-process; you want some texture in your burgers.
  • Transfer the ground salmon to a mixing bowl. Add the egg, almond flour, mayonnaise, chopped dill, garlic powder, onion powder, salt, and pepper. Mix until all the ingredients are well combined.
  • Form the salmon mixture into four equal-sized patties. If the mixture is too sticky, wet your hands slightly before shaping.
  • Heat the olive oil in a large non-stick skillet over medium heat. Once hot, add the salmon patties and cook for about 4-5 minutes on each side, or until they are golden and cooked through.
  • While the salmon burgers are cooking, prepare the Lemon Dill Sauce. In a small bowl, whisk together mayonnaise, lemon juice, chopped dill, Dijon mustard, minced garlic, salt, and pepper until smooth.
  • Once the salmon burgers are done, transfer them to a plate lined with paper towels to drain any excess oil.
  • Serve the salmon burgers hot with a generous dollop of the Lemon Dill Sauce on top or on the side for dipping.

Notes

For an even lighter version, you can grill the salmon burgers instead of frying them.
The almond flour can be replaced with coconut flour if desired, but you may need to adjust the quantity as coconut flour is more absorbent.
The Lemon Dill Sauce can be made ahead of time and stored in the refrigerator for up to a week.
If you prefer a spicier kick, add a pinch of cayenne pepper to your salmon burger mixture.
