Ingredients

For the Salisbury Steak:

  • 1 pound ground beef 453g
  • ½ cup almond flour 56g
  • ¼ cup grated Parmesan cheese 30g
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped 7.6g
  • 1 teaspoon garlic powder 3.1g
  • 1 teaspoon onion powder 2.1g
  • ½ teaspoon sea salt 2.5g
  • ½ teaspoon black pepper 1.2g
  • 2 tablespoons olive oil 30ml

For the Mushroom Gravy:

  • 1 cup mushrooms, sliced 70g
  • 2 tablespoons butter 28.4g
  • 1 cup beef broth 240ml
  • ½ cup heavy cream 120ml
  • 1 teaspoon Worcestershire sauce 5ml – ensure it’s low carb
  • ½ teaspoon xanthan gum 1.4g – for thickening
  • Sea salt and black pepper, to taste

Instructions

  • In a large bowl, combine ground beef, almond flour, grated Parmesan, egg, chopped parsley, garlic powder, onion powder, salt, and pepper. Mix well until ingredients are evenly distributed.
  • Shape the mixture into 4 oval patties, ensuring they are compact and hold together well.
  • Heat olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 5 minutes on each side or until a crust forms and they are browned. Remove the steaks and set aside.
  • In the same skillet, add the butter and mushrooms, sautéing until the mushrooms are golden brown.
  • Sprinkle xanthan gum over the mushrooms and stir to coat, cooking for another minute.
  • Gradually pour in beef broth while continuously stirring, followed by the heavy cream and Worcestershire sauce. Bring to a simmer and let the sauce thicken, stirring occasionally.
  • Return the Salisbury steaks to the skillet and spoon the gravy over the top. Cover and simmer for another 10 minutes, or until the steaks are cooked to your desired doneness.
  • Taste and adjust seasoning with additional salt and pepper if needed.

Notes

Ensure all dairy used is full-fat to keep it keto-friendly. The Worcestershire sauce can be omitted or substituted with a low-carb option to ensure the dish remains keto-compliant. The patties can be prepared in advance and stored in the refrigerator for a quick meal option during busy weekdays. If you do not have xanthan gum, you can also use a small amount of coconut flour or arrowroot powder to thicken the gravy, but be mindful of the additional carbs.
