Ingredients

  • 4 lamb chops (1 inch thick) (approx. 1.5 lbs or 680 grams)
  • 2 tablespoons olive oil (30 ml)
  • 4 cloves garlic, minced (about 4 teaspoons or 20 ml)
  • 1 tablespoon fresh rosemary, finely chopped (15 ml)
  • 1 teaspoon sea salt (5 ml)
  • ½ teaspoon black pepper (2.5 ml)
  • 1 tablespoon butter (15 ml)

Instructions

  • Pat the lamb chops dry with paper towels to ensure proper searing.
  • In a small bowl, combine olive oil, minced garlic, chopped rosemary, sea salt, and black pepper to create the marinade.
  • Rub the marinade evenly over both sides of the lamb chops and let them rest at room temperature for about 10 minutes to absorb the flavors.
  • Preheat a cast-iron skillet or grill pan over medium-high heat. Once hot, add the lamb chops to the pan without overcrowding.
  • Sear the lamb chops for about 3 to 4 minutes on one side, until a golden crust forms.
  • Flip the chops and add butter to the pan, spooning the melted butter over the chops as they cook for another 3 to 4 minutes for medium-rare, or longer to your desired doneness.
  • Transfer the lamb chops to a plate and let them rest for 5 minutes before serving to allow the juices to redistribute.

Notes

If preferred, the lamb chops can be marinated for up to 24 hours in the refrigerator for a deeper infusion of the rosemary and garlic flavors. Just be sure to bring them back to room temperature before cooking. For those on strict keto diets, ensure that all ingredients used are within your specific dietary needs.
