Ingredients

  • 1 large head Cauliflower (about 2 lbs / 900 g)
  • 2 tablespoons Olive oil (30 ml)
  • 1 cup Cheddar cheese (about 4 oz / 115 g, shredded)
  • 4 slices Bacon cooked and crumbled
  • ½ cup Sour cream (120 ml)
  • 2 Green onions sliced
  • 1 tsp Salt (5 g)
  • ½ tsp Black pepper (2 g)
  • ½ tsp Garlic powder (2 g)
  • ½ tsp Paprika (2 g)
  • ¼ cup Parmesan cheese (about 1 oz / 30 g, grated)

Instructions

  • Preheat your oven to 400°F (200°C). Remove the leaves and stem from the cauliflower head, then cut it into quarters. Steam or boil the cauliflower for about 10-12 minutes, or until tender. Drain and let it cool slightly.
  • Once cool enough to handle, transfer the cauliflower to a mixing bowl. Use a potato masher or fork to mash the cauliflower until smooth. You can also use a food processor for a creamier texture.
  • Add olive oil, salt, black pepper, garlic powder, and paprika to the mashed cauliflower. Mix well to ensure all ingredients are evenly distributed.
  • Line a baking sheet with parchment paper. Scoop about ¼ cup of the cauliflower mixture and shape it into a small oval or "skin" about ½ inch thick. Repeat until all the mixture is used, leaving space between each skin on the baking sheet.
  • Bake in the preheated oven for 20 minutes or until the edges are golden and crispy.
  • Carefully remove the baking sheet from the oven. Top each cauliflower skin with shredded cheddar cheese and crumbled bacon. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool for a few minutes. Top with a dollop of sour cream and sprinkle with sliced green onions. Serve warm and enjoy your delicious Keto "Potato" Skins!

Notes

Feel free to customize your toppings! Add jalapeños for a spicy kick or substitute the cheddar for other cheese varieties. These cauliflower skins can be made ahead of time and reheated in the oven for a quick and satisfying snack.
