Ingredients

For the Pork Belly:

  • 1 lb pork belly, skin removed
  • 1 tsp sea salt
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp ground black pepper

For the Avocado Salsa:

  • 2 ripe avocados, diced
  • 1 small red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1 Juice of 1 lime
  • Salt, to taste

For Assembly:

  • 8 large lettuce leaves (such as butter or romaine) or keto-friendly tortillas
  • Optional garnishes: lime wedges, additional cilantro, crumbled feta or cotija cheese

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a small bowl, mix together salt, cumin, smoked paprika, garlic powder, onion powder, and black pepper to create the seasoning rub for the pork belly.
  • Pat the pork belly dry with paper towels, then evenly coat it with the seasoning rub.
  • Place the seasoned pork belly on a rack in a roasting pan and roast in the preheated oven for 1 hour and 30 minutes, or until the pork belly is tender and the exterior is crispy.
  • While the pork belly is roasting, prepare the avocado salsa by combining diced avocados, red onion, cilantro, jalapeño, and lime juice in a bowl. Season with salt and gently toss to mix. Set aside to let the flavors meld.
  • Once the pork belly is done, remove it from the oven and let it rest for 10 minutes. Then, cut it into bite-sized pieces.
  • Assemble the tacos by placing a portion of the crispy pork belly into each lettuce leaf or keto-friendly tortilla.
  • Top with a generous spoonful of avocado salsa and any additional garnishes you desire.
