Ingredients

Dough

  • 1.5 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • 0.5 cup almond flour
  • 1 tsp garlic powder
  • 0.5 tsp Italian seasoning
  • 0.5 tsp salt

Toppings

  • 0.5 cup pepperoni slices (or your favorite pizza toppings)
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup pizza sauce (sugar-free)
  • fresh basil leaves (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for 30 seconds, then stir. Repeat in 15-second intervals until fully melted and combined.
  • In a separate bowl, whisk the egg. Add the melted cheese mixture to the egg and mix until smooth. Then, add the almond flour, garlic powder, Italian seasoning, and salt. Stir until a dough forms.
  • Place the dough between two sheets of parchment paper. Roll it out into a rectangle, about ¼ inch thick.
  • Spread the pizza sauce evenly over the rolled-out dough, leaving a small border. Sprinkle the shredded cheddar cheese and layer the pepperoni slices on top.
  • Carefully lift one edge of the parchment paper and start rolling the dough tightly into a log. Pinch the ends to seal.
  • Transfer the rolled sushi to the prepared baking sheet, seam side down. Bake for 15 minutes, or until golden brown.
  • Remove from the oven and let cool slightly. Slice into 1-inch pieces and garnish with fresh basil leaves.
