Ingredients

Cod Fillets

  • 4 6-ounce cod fillets 170 grams each

Bacon

  • 8 slices bacon 8 ounces, 227 grams

Pesto

  • ½ cup keto-friendly pesto homemade or store-bought, 120 grams

Seasoning

  • 1 tablespoon olive oil 15 ml
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • If your cod fillets are thick, slice them horizontally to create pockets for the pesto. If they are thinner, simply spread the pesto on top.
  • Spoon approximately 2 tablespoons (30 grams) of pesto into each pocket or on top of each fillet.
  • Season the outside of the cod fillets with salt and pepper to taste.
  • Wrap each cod fillet with 2 slices of bacon, making sure to overlap the slices slightly. Secure the bacon with toothpicks if necessary.
  • Heat the olive oil in a large, ovenproof skillet over medium-high heat.
  • Once hot, add the bacon-wrapped cod fillets to the skillet and sear for 2-3 minutes on each side, or until the bacon is starting to crisp up.
  • Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the cod is cooked through and the bacon is crispy.
  • Carefully remove the toothpicks before serving.

Notes

Ensure the bacon you use is keto-friendly and does not contain added sugars.
For the pesto, you can use fresh basil, pine nuts, garlic, Parmesan cheese, and olive oil to make it at home.
The internal temperature of the cod should reach 145°F (63°C) when done.
Let the dish rest for a few minutes after baking for the juices to redistribute before serving.
Serve with a side of steamed vegetables or a fresh salad to complete your keto-friendly meal.
