Ingredients

For the crust:

  • 1 ½ cups almond flour (150g)
  • 1 tbsp psyllium husk powder (9g)
  • ¼ cup grated parmesan cheese (30g)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 1 large egg
  • 2 tbsp olive oil (30ml)

For the topping:

  • ½ cup sugar-free pizza sauce (120ml)
  • 1 ½ cups shredded mozzarella cheese (150g)
  • ½ cup pepperoni slices (56g)

Additional toppings (optional):

  • Sliced olives, mushrooms, or bell peppers

Instructions

  • Preheat your oven to 425°F (220°C). Line a pizza pan or baking sheet with parchment paper.
  • In a mixing bowl, combine almond flour, psyllium husk, grated parmesan, garlic powder, Italian seasoning, and salt.
  • Add the egg and olive oil to the dry ingredients and mix until a dough forms. If the dough is too sticky, add a bit more almond flour until it's manageable.
  • Place the dough on the prepared pizza pan and press it out with your hands to form a round pizza shape, about 1/4 inch thick. Use a rolling pin for a smoother surface if desired.
  • Bake the crust for 8-10 minutes or until it begins to turn golden brown.
  • Remove the crust from the oven and spread the sugar-free pizza sauce evenly over the surface, leaving a small border around the edges.
  • Sprinkle the shredded mozzarella cheese over the sauce and arrange the pepperoni slices on top. Add any additional desired toppings.
  • Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  • Once cooked, remove the pizza from the oven and let it cool for a couple of minutes before slicing and serving.

Notes

Feel free to get creative with the toppings – just remember to account for any additional carbs if you're strictly monitoring your keto macros. The crust can also be pre-baked and frozen for a quick and easy keto pizza base ready whenever you are!
