Ingredients

  • 4 large eggs (about 240g)
  • 2 tablespoons heavy cream (30ml)
  • ½ cup shredded mozzarella cheese (60g)
  • ¼ cup sliced pepperoni (about 30g)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • salt and pepper to taste
  • 1 tablespoon olive oil (15ml)
  • fresh basil leaves for garnish (optional)

Instructions

  • In a mixing bowl, crack the eggs and add the heavy cream. Whisk together until the mixture is smooth and fully combined. Season with garlic powder, onion powder, salt, and pepper.
  • In a non-stick skillet, heat the olive oil over medium heat. Make sure the oil coats the bottom of the pan evenly.
  • Once the oil is hot, pour the egg mixture into the skillet. Allow it to cook undisturbed for about 2-3 minutes, or until the edges begin to set. Use a spatula to gently lift the edges and let any uncooked egg flow to the bottom.
  • When the omelet is mostly set but still slightly runny on top, sprinkle the shredded mozzarella cheese evenly over one half of the omelet. Layer the sliced pepperoni on top of the cheese, followed by a sprinkle of dried oregano.
  • Using the spatula, carefully fold the other half of the omelet over the toppings. Cook for an additional 1-2 minutes, allowing the cheese to melt and the flavors to meld together.
  • Gently slide the omelet onto a plate. Garnish with fresh basil leaves if desired. Cut in half and enjoy your delicious Keto Pepperoni Pizza Omelet!
