Ingredients

  • 1 cup heavy whipping cream 240ml
  • ½ cup natural peanut butter unsweetened, 128g/4.5oz
  • ¼ cup powdered erythritol 48g/1.7oz
  • 1 tsp vanilla extract 5ml
  • ¼ tsp sea salt 1.2g
  • ¼ tsp xanthan gum optional for thicker texture, 0.6g

Instructions

  • Begin by chilling a medium mixing bowl in the refrigerator for about 10 minutes.
  • Once chilled, pour the heavy whipping cream into the bowl and use an electric mixer to whip it until soft peaks form.
  • Add the powdered erythritol and vanilla extract to the whipped cream, continuing to whip until stiff peaks form.
  • In a separate bowl, combine the natural peanut butter and sea salt, stirring until well mixed.
  • Gently fold the peanut butter mixture into the whipped cream until fully incorporated, being careful not to deflate the cream. If a thicker mousse is desired, sprinkle xanthan gum evenly over the mixture and fold in until well combined.
  • Spoon the mousse into serving dishes or a piping bag to pipe into individual cups.
  • Chill the mousse in the refrigerator for at least 1 hour before serving to allow the flavors to meld and the mousse to set.
  • Garnish with a sprinkle of crushed peanuts or a drizzle of sugar-free chocolate syrup before serving, if desired.

Ensure that the peanut butter used is unsweetened and free from added sugars to maintain ketosis.
The mousse can be stored in the refrigerator for up to 3 days.
For a nut-free version, consider using seed butter like sunflower seed butter in place of peanut butter.
