Ingredients

  • 8 oz cream cheese softened
  • 1 cup natural peanut butter unsweetened
  • ½ cup unsalted butter softened
  • ½ cup powdered erythritol or to taste
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  • In a medium-sized mixing bowl, combine the softened cream cheese, peanut butter, and unsalted butter. Using an electric mixer, blend the ingredients on medium speed until the mixture is smooth and well-combined.
  • Add the powdered erythritol to the mixture. Continue to blend on medium speed, ensuring the sweetener is fully incorporated and the mixture remains creamy.
  • Mix in the vanilla extract and salt, blending until these are evenly distributed throughout the fudge mixture.
  • Line an 8-inch square baking pan with parchment paper, allowing some overhang for easy removal later.
  • Transfer the fudge mixture to the prepared pan. Using a spatula, spread the mixture evenly into the pan, smoothing out the top.
  • Place the pan in the refrigerator for at least 2 hours, or until the fudge is firm and set.
  • Once chilled and set, use the parchment paper overhang to lift the fudge out of the pan. Place on a cutting board and slice into 12 even pieces.
  • Serve immediately, or store in an airtight container in the refrigerator.

Notes

For a firmer fudge, keep refrigerated until ready to serve. The erythritol can be adjusted according to your sweetness preference. Ensure all ingredients are at room temperature before starting for easier blending. For a nut-free version, swap out peanut butter for sunflower seed butter.
