Ingredients

  • 1 lb Paneer (Indian cottage cheese)
  • ½ cup Greek yogurt, full-fat
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Garlic paste
  • 1 tsp Ginger paste
  • ½ tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Garam masala
  • ½ tsp Cumin powder
  • Salt to taste
  • 1 each Red bell pepper cut into 1-inch squares
  • 1 each Green bell pepper cut into 1-inch squares
  • 1 each Yellow bell pepper cut into 1-inch squares
  • 1 large Red onion cut into 1-inch squares

Instructions

  • Cut the paneer into 1-inch cubes and set aside.
  • In a bowl, combine the Greek yogurt, olive oil, lemon juice, garlic paste, ginger paste, turmeric, red chili powder, garam masala, cumin powder, and salt. Mix well to create the marinade.
  • Add the paneer cubes to the marinade and gently toss to coat evenly. Cover and refrigerate for at least 1 hour, or overnight for better flavor absorption.
  • Preheat your grill or grilling pan over medium heat.
  • Thread the marinated paneer, bell peppers, and onions onto skewers, alternating between them.
  • Place the skewers onto the hot grill and cook for 3-4 minutes on each side, or until the paneer is golden and vegetables are slightly charred.
  • Remove the skewers from the grill and let them rest for a couple of minutes before serving.

Notes

If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning.
The paneer can be marinated up to 24 hours in advance for deeper flavor development.
Adjust the spice levels according to your preference.
If cooking indoors, use a well-ventilated area or a kitchen exhaust fan to manage any smoke from grilling.
Serve these skewers with a side of mint-cilantro chutney or a drizzle of lime juice for an extra zesty flavor.
