Ingredients

  • 16 oz cremini or button mushrooms cleaned and stems trimmed
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh thyme leaves chopped
  • 1 tbsp fresh rosemary leaves chopped
  • 1 tbsp fresh parsley leaves chopped

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the cleaned mushrooms with olive oil, minced garlic, salt, and black pepper. Toss until the mushrooms are evenly coated with the oil and seasoning.
  • Spread the mushrooms out in a single layer on a baking sheet. Ensure they are not overcrowded to allow them to roast properly.
  • Sprinkle the chopped thyme and rosemary over the mushrooms.
  • Place the baking sheet in the preheated oven and roast for 20 minutes, or until the mushrooms are golden brown and tender.
  • Remove from the oven and sprinkle with fresh chopped parsley before serving.

Notes

For a richer flavor, you can add a splash of balsamic vinegar before roasting.
These mushrooms can be stored in an airtight container in the refrigerator for up to 3 days.
Ensure the mushrooms are patted dry before seasoning to prevent them from becoming soggy during roasting.
