Ingredients

  • 2 cups almond flour (224g / 8oz)
  • ½ cup granulated erythritol (96g / 3.4oz)
  • 3 large eggs
  • ¼ cup unsalted butter, melted (57g / 2oz)
  • ¼ cup fresh orange juice (60ml / 2 fl oz)
  • 1 tablespoon orange zest (from about 1 large orange)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum (optional, for texture)
  • Almonds, sliced for garnish

Instructions

  • Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan with butter or non-stick spray.
  • In a medium bowl, combine almond flour, erythritol, baking powder, salt, and xanthan gum (if using).
  • In a separate large bowl, whisk together eggs, melted butter, orange juice, orange zest, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until you have a smooth batter.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Sprinkle sliced almonds on top of the batter for garnish.
  • Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure all ingredients are at room temperature before starting to help them mix together more easily. Be careful not to overmix the batter, as this can lead to a dense cake. The xanthan gum is optional but can help give the cake a better crumb structure. Store any leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
