Ingredients

  • 1 cup Almond Flour (112g)
  • ½ cup Erythritol (100g)
  • 2 tsp Ground Cinnamon (5.2g)
  • 4 oz Cream Cheese (113g)
  • ¼ cup Unsalted Butter (57g), softened
  • 1 tsp Vanilla Extract (4.2ml)
  • ¼ tsp Salt (1.5g)

Instructions

  • In a medium mixing bowl, combine almond flour, erythritol, ground cinnamon, and salt. Mix well to distribute the cinnamon evenly throughout the dry ingredients.
  • Add the softened cream cheese and butter to the dry mixture. Using a hand mixer or a spatula, blend the ingredients together until a dough forms. The dough should be slightly crumbly but sticks together when pressed.
  • Stir in the vanilla extract and mix until fully incorporated into the dough.
  • Line a baking sheet with parchment paper. Using a cookie scoop or spoon, form the dough into 10 equal-sized balls. Flatten each ball slightly to form a cookie shape.
  • Using a fork, press down on each cookie to create a crisscross pattern, further flattening the cookies and adding a decorative touch.
  • Place the baking sheet with cookies in the refrigerator for at least 30 minutes to set. This will help the cookies firm up and develop their flavors.
  • Once set, serve immediately or store in an airtight container in the refrigerator for up to one week.

Notes
