Ingredients

Pizza Dough

  • cups Almond flour (150g)
  • 2 tbsp Psyllium husk powder (14g)
  • 1 tsp Baking powder (4g)
  • ½ tsp Sea salt (2g)
  • ½ cup Warm water (120ml)
  • 2 tbsp Olive oil (30ml)

Cheese Mixture

  • 1 cup Shredded mozzarella cheese (100g)
  • 2 tbsp Cream cheese (30g)

Toppings

  • 1 cup Fresh mushrooms, sliced (70g)
  • 3 cloves Fresh garlic, minced (9g)
  • 1 tsp Italian seasoning (2g)
  • 2 tbsp Fresh basil leaves, chopped (5g)
  • ¼ cup Parmesan cheese, grated (25g)

Instructions

  • Preheat your oven to 425°F (220°C). Line a pizza stone or baking sheet with parchment paper and set aside.
  • In a large bowl, whisk together the almond flour, psyllium husk powder, baking powder, and sea salt.
  • Add the warm water and olive oil to the dry ingredients, stirring until a dough starts to form.
  • Microwave the shredded mozzarella and cream cheese for 30 seconds, stir and repeat until fully melted and combined.
  • Mix the melted cheese into the dough, kneading with your hands until a smooth dough forms.
  • Place the dough on the parchment paper and roll it out into a circle, about ¼ inch thick.
  • Pre-bake the crust for 8 minutes, or until it starts to turn golden.
  • While the crust is pre-baking, sauté the sliced mushrooms and minced garlic in a skillet over medium heat until the mushrooms are soft and the garlic is fragrant.
  • Remove the crust from the oven and spread the mushroom and garlic mixture evenly on top.
  • Sprinkle Italian seasoning, chopped basil, and grated Parmesan cheese over the toppings.
  • Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  • Slice the pizza and serve hot.

Notes

To ensure the crust cooks evenly, you can flip it over after the initial 8 minutes of pre-baking before adding toppings. For an extra crispy crust, try preheating your pizza stone before placing the dough on it.
